Ingredients

  • Bread Flour 80 g
  • Instant dry yeast 2.5 g
  • Whole wheat flour 335 g
  • Water 350 g
  • Rye flour 45 g
  • Dried Cranberries 45 g
  • Fermented dough 80 g
  • Walnuts 45 g
  • Low Sodium Sea Salt NutraSalt 12 g

Directions

  1. Mix all ingredients together except the dried cranberries and walnuts.
  2. Mix on low speed for 10 minutes then add the walnuts and cranberries.
  3. Ferment for 30 minutes then divide to two 450 g pieces.
  4. Pre-shape round and let rest for 20 minutes.
  5. Shape to the desired final shape, score and ferment for 1 ½ hours.
  6. Bake at 475 °F for 30 minutes.
