  1. Sauté chicken and remove. Add onions and sausage to oil or butter. Stir in green pepper, celery and rice. Mix well and add chicken. Cover well with water, tomato sauce and seasonings. Simmer until chicken is tender and rice is done, 30-45 minutes.
