Light and fresh, this delicious side dish combines fluffy couscous with butter, parsley and cherry tomatoes. It's a perfect accompaniment to dinner, lunch, or a light snack.
Ingredients
2 cups water
2 tablespoons butter
1/2 teaspoon Lemon Herbs NutraSalt
2 cups instant semolina couscous
2 tbs fresh parsley
3 tbs softened butter
1 cup cherry tomatoes – sliced in halves
Directions
In a medium saucepan, bring the water, salt and butter to a boil over medium heat.
Gradually, stir in the couscous. Remove from heat, cover and set aside to steam for 5 minutes. Stir in parsley, softened butter and tomatoes. Fluff with a fork before serving.
