Gazpacho

Ingredients

  • 1 large cucumber, seeds removed, cut into large chunks.
  • 2 large bell peppers, seeded and sectioned
  • 4 roma or similar flavorful tomatoes
  • 1 large onion
  • 4 garlic cloves, minced
  • 4 cups tomato juice
  • 1/4 cup good olive oil
  • 1/2 tablespoon Low Sodium Sea Salt NutraSalt
  • 1 teaspoons freshly ground black pepper

Directions

  1. Chop all vegetables into large chunks.
  2. Place in food processor with ½ cup of tomato juice and process until almost smooth.
  3. Place into bowl and stir in remaining ingredients. Mix well.
  4. Cover and refrigerate at least 1 hr before serving.
