Butter and Parsley Couscous with Cherry Tomatoes

Light and fresh, this delicious side dish combines fluffy couscous with butter, parsley and cherry tomatoes. It's a perfect accompaniment to dinner, lunch, or a light snack.

Ingredients

  • 2 cups water
  • 2 tablespoons butter
  • 1/2 teaspoon Lemon Herbs NutraSalt
  • 2 cups instant semolina couscous
  • 2 tbs fresh parsley
  • 3 tbs softened butter
  • 1 cup cherry tomatoes – sliced in halves

Directions

  1. In a medium saucepan, bring the water, salt and butter to a boil over medium heat. Gradually, stir in the couscous. Remove from heat, cover and set aside to steam for 5 minutes. Stir in parsley, softened butter and tomatoes. Fluff with a fork before serving.
